new focaccia at la cucina!
Bruno has recently started doing new filled rosemary focaccia and they are really popular. We do 3 types:
- chicken, rocket and roast pepper.
- parma ham, rocket and Parmesan shavings.
- parma ham, gorgonzola and red onion.
A pizza ball is hand stretched:


The focaccia is drizzled with olive oil and the rosemary is finely chopped:


The focaccia is sprinkled with the rosemary and sea salt:


It is then cooked at about 380 degrees until golden brown:


They are then cut open and filled:


The chicken is the most popular but my favourite is the parma ham and gorgonzola.

Looks brilliant - nearly enough to make me drive to Limerick for lunch and I am in Naas. Why could you not have been there when I was in UL many moons ago. It would have been a nice change from the the Stables’ special and chips!
All of these look so good!! And that dough! Love all the photo’s Lor, but now I’m so hungry.
I’m sure these are a huge hit! Whats the chance of getting that dough recipe?

Anon - not at the moment as we do a ciabatta that is really popular, even the non-vegetarians are choosing it over the others. If there is enough demand for it we will, we’ll see how they go.
